Lion's Mane Crab Cakes

  • 200-250grams Lion’s Mane Mushrooms
  • 1/3 Cup Panko Breadcrumbs
  • 1tbsp parsley, chopped
  • ¼ tsp each cracked pepper & salt
  • 1 egg
  • ½ tbsp Dijon Mustard
  • 3tbsp mayonnaise
  • 1tsp Worcestershire Sauce
  • ½ tsp hot sauce (or leave out if no heat wanted)
  • Olive Oil for frying

  1. Shred the mushrooms into small pieces by hand, similar to the texture of cooked crab
  2. Add to a medium sized bowl with the parsley, panko, salt & pepper.
  3. In a smaller bowl mix together the wet ingredients – egg, mayo, Worcestershire & hot sauce
  4. Combine the wet sauce mix into the mushroom mix, be sure to mix it thoroughly.
  5. Using your hands divide the mixture into 4, rolling into patties. Press them firmly together & if you have time let them sit in the fridge for 30minutes before cooking to help them hold their shape.
  6. Heat the oil in a frying pan & at a medium heat cook the patties until crispy & golden. Usually takes 5mins per side max.
  7. Serve with your dipping sauce of choice (we like an old-fashioned tartare) & a side salad, or hot chips for the win!

can easily become vegan, replacing the egg with a moist substitute such as silken tofu or ‘aquafaba’, plus use vegan alternatives for the mayonnaise.

A simple stir fry with Lion's mane mushroom

Lion's Mane Stir Fry

Ingredients

  • 500g lion's mane
    mushrooms, sliced
  • 2 Tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oi
  • salt and pepper to taste
  • Fresh cilantro or green onions for garnish
    (optional)

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the sliced lion's mane mushrooms to the skillet and stir-fry for about 5-7 minutes until they start to brown and become tender.
4. In a small bowl, mix together the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper.
5. Pour the sauce mixture over the mushrooms and stir-fry for an additional 2-3 minutes until the mushrooms are well coated and cooked through.
6. Remove from heat and garnish with fresh cilantro or green onions if desired.
7. Serve the lion's mane stir-fry as a side dish or over steamed rice for a complete meal.

Creamy Lion's Mane Pasta

  • 500g lion's mane mushrooms, sliced
  • 220g pasta of your choice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, melt the butter over medium heat.
3. Add the minced garlic and sauté for about 1 minute until fragrant.
4. Add the sliced lion's mane mushrooms to the skillet and cook for about 5-7 minutes until they start to brown and become tender.
5. Pour in the heavy cream and bring it to a simmer. Let it cook for about 2-3 minutes, stirring occasionally.
6. Stir in the grated Parmesan cheese until it melts and the sauce becomes creamy.
7. Season with salt and pepper to taste.
8. Add the cooked pasta to the skillet and toss it with the creamy lion's mane sauce until well coated.
9. Remove from heat and garnish with chopped fresh parsley.

Ingredients

  • 500g lion's mane mushroom
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

1. Preheat your oven to 200°C (400°F).
2. Clean the lion's mane mushroom by gently wiping it with a damp cloth or paper towel. Trim off any tough or woody parts.
3. Slice the lion's mane mushroom into thick steak-like pieces, about 1 inch thick.
4. In a small bowl, whisk together the olive oil, soy sauce, balsamic vinegar, smoked paprika, garlic powder, salt, and pepper.
5. Place the lion's mane steaks in a shallow dish and pour the marinade over them. Make sure each steak is well coated. Let them marinate for at least 15 minutes to allow the flavors to infuse.
6. Heat a grill pan or skillet over medium-high heat. Once hot, add the lion's mane steaks and cook for about 3-4 minutes on each side until they develop a nice sear.
